Cafe Pierpont Halibut Tacos
Ingredients
- 8 1 oz. pieces fresh halibut filet
- 4 6-inch flour tortillas, warmed
- 4 oz. tomato, diced
- 1 C. green cabbage, shredded
- Jack and cheddar cheese, grated (optional)
- Ranch-Chipotle Sauce:
- 8 oz. ranch dressing of your choice
- 2 oz. canned chipotles
Directions
Cook the halibut pieces for approximately 2 minutes on each side in a sauté pan over medium-high heat. Then place 2 pieces of halibut in the center of each flour tortilla, spoon one oz. of diced tomatoes over the halibut, add the shredded cabbage, and grated cheeses (optional). Finish off with a drizzle of Ranch-Chipotle Sauce.
To make sauce, mix all the ingredients together.
Yield: 4 servings
