Cafe Pierpont Halibut Tacos

Put a south of the border spin on your fish dish and toss them in a taco! The Ranch-Chipotle sauce really tops it off!

Ingredients

  • 8 1 oz. pieces fresh halibut filet
  • 4 6-inch flour tortillas, warmed
  • 4 oz. tomato, diced
  • 1 C. green cabbage, shredded
  • Jack and cheddar cheese, grated (optional)
  • Ranch-Chipotle Sauce:
  • 8 oz. ranch dressing of your choice
  • 2 oz. canned chipotles

Directions

Cook the halibut pieces for approximately 2 minutes on each side in a sauté pan over medium-high heat. Then place 2 pieces of halibut in the center of each flour tortilla, spoon one oz. of diced tomatoes over the halibut, add the shredded cabbage, and grated cheeses (optional). Finish off with a drizzle of Ranch-Chipotle Sauce.

To make sauce, mix all the ingredients together.

Yield: 4 servings
