Cajun Fried Potatoes and Sausage

Andouille is gumbo sausage popular in Cajun cooking. You can use other sausage and it would taste okay.

  • 6 potatoes, peeled and sliced
  • 2 tsp. of corn oil
  • 1 pound of Andouille Sausage, cut into 1/4-inch rounds 1/2 green bell pepper, seeded and diced
  • 1/2 red bell pepper, seeded and diced
  • 1/2 tsp. of seasoning salt
  • 1/2 tsp. of ground black pepper
  • 1 onion, peeled and diced

Place the sliced potatoes in a large bowl of cold water and allow to sit for 10 minutes. Drain, rinse and replace the water and allow to sit for an additional 10 minutes; drain. Heat the oil in a large skillet over medium-high heat. Add sausage to the skillet and saute for about 2 minutes. Add the potatoes, peppers, seasoning salt and pepper. Cover, lower the heat to medium, and continue to cook for about 10 minutes, stirring occasionally. Add the onions and cook the mixture until the ingredients are tender, for about 3 more minutes. Serve warm.
