Ingredients
- 2 (14.5 oz.) cans stewed tomatoes, undrained
- 1 lb. skinless, boneless chicken thighs, cut
- 1 (14.5 oz.) can broth
- 1 green pepper, chopped
- 1 large onion, chopped
- 2 stalks celery, chopped
- 1 Tbs. Cajun seasoning
- 3 cloves garlic, minced
- 1/4 tsp. pepper
- 1/4 tsp. cayenne pepper
- 1 lb. shrimp, peeled and deveined
- 4 C. rice, cooked

Put chicken, broth, tomatoes, onion, celery, green pepper, garlic, Cajun seasoning, cayenne pepper, and pepper to crockpot and stir to mix. Cover and cook for 6 hours on low heat. Remove lid and stir in shrimp. Cover and cook for about 3 more minutes. Serve over hot rice.
