Gumbo is an iconic New Orleans dish. This recipe for shrimp gumbo is inspired by the Big Easy and basically makes itself. Just put in the crockpot, cook for 6 hours, and enjoy the mini trip to the South!

Ingredients

  • 2 (14.5 oz.) cans stewed tomatoes, undrained
  • 1 lb. skinless, boneless chicken thighs, cut
  • 1 (14.5 oz.) can broth
  • 1 green pepper, chopped
  • 1 large onion, chopped
  • 2 stalks celery, chopped
  • 1 Tbs. Cajun seasoning
  • 3 cloves garlic, minced
  • 1/4 tsp. pepper
  • 1/4 tsp. cayenne pepper
  • 1 lb. shrimp, peeled and deveined
  • 4 C. rice, cooked

Put chicken, broth, tomatoes, onion, celery, green pepper, garlic, Cajun seasoning, cayenne pepper, and pepper to crockpot and stir to mix. Cover and cook for 6 hours on low heat. Remove lid and stir in shrimp. Cover and cook for about 3 more minutes. Serve over hot rice.
