Calamari with Fettuccine

This delicious seafood pasta dish will be done in 20 minutes or less!

  • 1 lb. calamari, cut into rings
  • 2 Tbs. extra-virgin olive oil
  • 4 garlic cloves, chopped
  • 1 tsp. crushed red pepper flakes
  • 1/2 C. dry white wine
  • one 14-oz. can chunky crushed tomatoes
  • 1 tsp. curry powder
  • pinch of ground cinnamon
  • salt and pepper
  • handful of parsley leaves
  • 3/4 lb. egg fettuccine
  • 10 fresh basil leaves, torn

Cook fettuccine until al dente and strain.  Heat large skillet over medium-high heat, add olive oil and calamari, and cook for 3 minutes, stirring and turning frequently.  Add garlic and pepper flakes and cook for 2 more minutes.  Add wine and cook off (this should take about 30 seconds).  Add tomatoes, curry, cinnamon, salt, pepper, and parsley.  Toss pasta with calamari and place on a platter.  Top with basil and serve.
