Special Mother's Day Entry I use this recipe for my mom's Calico Beans so often, it has become my signature dish for carry-ins.

Ingredients

  • 1 can red kidney beans
  • 1 can lima butter beans
  • 2 cans pork and beans
  • 1/2 lb. bacon, chopped
  • 1/2 C. chopped onion
  • 2/3 C. brown sugar
  • 1/2 C. sugar
  • 2 tsp. vinegar
  • 1/2 C. catsup
  • 1/2 tsp. salt
  • 1/2 tsp. dry mustard

Directions

Drain the kidney and lima beans and place in a 2-3 quart casserole or bean pot. Add pork and beans then mix well. Cook the bacon in a skillet until crisp, then remove bacon with a slotted spoon and add to beans. Sauté onions in bacon drippings until tender and add to bean mixture. Mix remaining ingredients in a small bowl and stir into beans. You may choose to prepare a day ahead and refrigerate for better flavor.

Bake covered, at 300 degrees for 1 hour and 15 minutes. Uncover and bake for 15 minutes longer. May add 1 lb. browned ground beef before baking if desired.

Note: I have cooked them in a crock pot for 3 hours and also have tripled the recipe and baked in a large electric roaster.
