My husband's family always gets together on the 4th. The food is assigned out. Each year I am asked to bring Calico Beans. Everyone loves it. I make it in a very large red Dansk casserole which I assemble in the morning and bake 2-4 hours. The dish always comes home empty. One year someone else brought the beans (she chose before they asked me) but ever since then they have reserved the beans for me. It's just an ordinary bean recipe but I think I use sausage and hamburger combination so maybe that's why it tastes a little different. I usually bake it in the oven because of the larger pan I can use but it is good in the crock pot. Enjoy.

Ingredients

  • 1/2 lb. hamburger browned
  • 1/2 lb sausage
  • 1/3 lb. bacon cut into pieces
  • 3/4 c. chopped onion
  • Brown all of these together. Add beans.
  • [Use any combination of beans. I used the following: (#2 cans)]
  • 2 cans small lima beans (green-drained)
  • 2 cans small (or large) butter beans (drained)
  • 2 cans red beans (drained)
  • 2 cans pork and beans (not drained)
  • Save some of the drained bean liquor. Add the following to about 3/4 C.
  • of the liquor:
  • 3/4 C. brown sugar
  • 1/2 C. catsup
  • 1 Tbs. mustard (wet)
  • 2 Tbs. vinegar
  • 1/4 C. molasses

Directions

Put everything together in crock pot and stir. I baked all evening and night--about 2 hours on high and the rest on low. You can bake in the

oven at 325 degrees for about 2-4 hours. I do not add any salt. The amounts on all ingredients are approximate. Use variations or amounts you wish. Bake with the lid OFF otherwise beans will be too runny.
