Chili is a great way to feed a crowd and warm everyone up on cold night at the campsite. It is easy to make and can be cooked over a campfire with ease.

  • 2 lbs. lean ground beef
  • 1/8 C. cooking oil
  • 1 onion, diced
  • 1 red pepper, diced
  • 1 can diced tomatoes
  • 15 oz. can tomato sauce
  • 1 can black beans, drained
  • 1 beef bouillon cube
  • 1 C. water

Coat the pot with the oil. In a bowl, dissolve the beef bouillon on the water. Add the onion and pepper to the pot and sauté over the fire. Add the ground beef and cook until just browned. Season with salt and pepper. Add the tomatoes, sauce and beans to the pot. Stir in the beef broth and bring to a boil over the fire. Move it to a cooler part of the grate and allow it to simmer for 30 minutes.
