Ingredients

  • 1 Boneless Chicken Breast
  • 1 Tablespoon of Olive Oil
  • ½ Juiced Lemon
  • 1 Pinch of Salt
  • 1 Pinch of Pepper
  • 1 Pinch of Basil
  • ¼ Cup of Blueberries
  • ½ Cup of Chopped Cherry Tomatoes
  • ½ Cup of Cubed Feta Cheese
  • 1 Cup of Mixed Greens
  • ¼ Cup of Red Cabbage
  • ¼ Cup of Chickpeas
  • (Any Dressing You Like!)

Directions

In a skillet over medium-high heat, pour in the olive oil to cook your chicken breast. Add in the juice from ½ a lemon, salt, pepper, and basil and let it cook for around 7-10 minutes on each side.

Then, mix together the remaining ingredients -- the blueberries, cherry tomatoes, mixed greens, red cabbage, and chickpeas -- and lay the chicken on top. Drizzle your favorite dressing over everything and enjoy!
