Canadian Bacon Asparagus Frittata

A breakfast you can enjoy before work that is simple, easy and delicious! Feel free to substitute other ingredients for the bacon or asparagus.

Ingredients

  • 4 lg. eggs
  • 1/2 C. cooked asparagus, chopped
  • 1/2 Tbs. fresh garlic, minced or smashed
  • 2 Tbs. white portion of spring onion, minced
  • 2-3 Tbs. fresh parmesan cheese, grated
  • 1/2 Tbs. butter
  • 1/3 C. heavy cream
  • green tops of spring onion, chopped
  • salt and pepper to taste
  • 1/2 C. canadian bacon, chopped

Directions

Preheat oven to 350 degrees. Using a non-stick skillet that's oven-safe, heat the pan on medium-low and add butter to melt. Saute minced onion for 1 minute and then add the garlic and saute for another minute. In a medium size bowl, beat together the eggs, cheese, heavy cream, salt and pepper, and set aside. Add the Canadian bacon and asparagus to the skillet and saute and stir for 3-5 minutes. Pour ithe egg mixture into the skillet. and cook about 3 minutes or until the bottom is firm. Transfer to the oven, checking every few minutes until the frittlata top is firm and not runny. Serve on 2 plates and sprinkle green onion tops over frittata.
