Candied Smoked Paprika Cherry Berries

- 5 slices bacon, cooked crispy, chopped
- 2 Tbs. salted butter, divided
- 1 pt. cherry berries
- 1 1/2 Tbs. white sugar
- 1/2 tsp. smoked paprika
- 1 whole-wheat baguette
- 1/2 (5.2 oz.) pkg. garlic and herb soft cheese
- 1/2 C. green onions, diced
Cook bacon until golden brown in frying pan, remove and pat dry with paper towel. Let cool, chop and set aside.
Rinse cherry berry tomatoes under cool water and slice vertically. Place tomatoes in medium bowl and cover with sugar and smoked paprika. Toss tomatoes until they are all well coated.
Slice baguette into 20 1/4-inch thick pieces. Slather each piece with garlic and herb soft cheese and toast until bread is crispy and cheese melty (about 5 minutes).
Put medium frying pan on high heat and add 1 Tbs. salted butter. Allow butter to melt and add half the sugar/paprika coated cherry berries to pan. Turn heat to high and saute tomatoes for 3-5 minutes until they turn golden and begin to caramelize. Once tomatoes are candied pour them into a clean bowl. Caramelize the other half of the tomatoes in the same way.
Place 3-4 caramelized cherry berries on top of each slice of toasted, cheesy bread. Sprinkle each slice with chopped bacon and green onions. Serve and enjoy.
