  • 4 lb. sweet potatoes
  • 3 C. mini marshmallows
  • 1 1/4 C. margarine
  • 1 1/4 C. brown sugar

Preheat oven to 400 degrees F. Grease a 9x13 in baking dish. Boil water in a large pot and add in potatoes for about 15 minutes. Drain and peel. In a large saucepan, add in the margarine and brown sugar and also 2 cups of the mini marshmallows. Cook and stir until marshmallows are melted. Stir the potatoes into the marshmallow mixture, mashing the potatoes into chunks. Transfer into baking dish and bake for 15 minutes. Add remaining marshmallows on top and return to oven.
