  • Cake
  • 2 1/4 C. all purpose flour
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 3/4 C. unsweetened cocoa
  • 1 3/4 C. granulated sugar
  • 1/2 C. unsalted butter
  • 1/3 C. vegetable oil
  • 1 tsp. vanilla extract
  • 1 C. milk
  • 1/2 C. water
  • 4 cage-free eggs
  • Frosting
  • 3/4 C. butter, at room temperature
  • 1 tsp. vanilla extract
  • 3 C. powdered sugar, sifted
  • 2 T. milk
  • 4 candy canes crushed to powder

Preheat oven to 350 degrees Fahrenheit and lightly grease a 9 x 13 pan.
In a bowl, combine flour, baking powder, baking soda, salt, cocoa, and sugar.
Add butter to the dry ingredients and mix at low speed for a minute. Keep the mixer running while you add the oil and mix until the mixture looks like sand.
In another bowl combine vanilla with milk and water. Add to sand-like mixture and mix for a couple of minutes at low speed.
Add eggs one at a time, beating at medium speed between each one until thoroughly combined.
Pour batter into prepared pan and bake for around 35 minutes. Cake is done when you insert a toothpick, which should come out clean.
To add the frosting, cream butter and vanilla in a bowl until combined.
Adding one cup of sugar at a time, mix into butter until thoroughly combined.
Mix in milk until you reach the desired consistency.
Add crushed candy canes and stir until combined.
