  • ¾ cup of unsalted butter, room temperature
  • 1 ½ cup of light brown sugar
  • ½ cup of granulated sugar
  • 1 large egg
  • 1 teaspoon of vanilla extract
  • ¾ peanut butter (smooth or crunchy)
  • 2 cups of all-purpose flour
  • ½ teaspoon of baking soda
  • ¼ teaspoon of salt
  • ½ cup of chocolate candies

Preheat the oven at 350F.
In the bowl of an electric mixer or hand mixer, beat the unsalted butter, sugars for 2-3 minutes or until they look light and fluffy. Slowly, add your choice of peanut butter. Then, add the large egg and vanilla extract into the mixture. Add the peanut M&Ms.
In another separate bowl, whisk the dry ingredients (flour, baking soda, and salt) together. Combine the peanut mixture with the dry ingredients and begin to fold the batter. If the batter is too soft to form balls, place the batter in the refrigerator for 60 minutes.
Roll the batter into 1 inch balls.
Be sure to place parchment paper on the baking sheet to keep the cookies from burning. Transfer the cookie balls into the baking sheet. Be sure to keep the cookies 2 inches apart from each other.
Using a fork dipped in white sugar, create a crisscross pattern.
Bake the cookies for 10-12 minutes or until they are light brown. Once they are done baking, place the cookies on a cooling rack.
