Cappy's Garlicky Fish Soup

I live on an island and we eat a lot of fish and seafood. You don't have to live near the ocean, howver, to enjoy this fish soup bursting with flavor and warmth for cold winter days. Tastes even better the day after!

Ingredients

  • 1 14-oz. can crushed tomatoes
  • 3 med. potatoes, peeled and cubed
  • 3 Tbs. chopped parsley
  • 3 cloves crushed garlic
  • 1 Tbs. basil leaves
  • 3 Tbs. lemon juice
  • 2 Tbs. olive oil
  • 1 lg. onion, finely cubed
  • 1 pkg. frozen cod filets, cubed
  • 1 pt. fish stock
  • salt and pepper to taste

Directions

Heat olive oil. Add potatoes, garlic and onion. Sauté over medium heat for 6-7 minutes. Add fish stock, tomatoes, basil, lemon juice and parsley. Simmer for 10 minutes. Add salt and pepper (Tabasco Sauce if you like it hot). Add the fish cubes and simmer for another 10 minutes.
