This salad is quite delicious and colorful. It is made with tomatoes, mozzarella, and basil. What makes this salad even better is getting to use fresh tomatoes

  • 2 cups of cooked quinoa
  • 1 cup of fresh tomatoes, diced
  • 1 cup mini fresh mozzarella cheese balls
  • 2 teaspoons of basil seasoning
  • 3 to 4 tablespoons of balsamic vinegar
  • 2 to 3 tablespoons of olive oil
  • 3/4 teaspoon of salt
  • 1/2 a teaspoon of black pepper
  • Pinch of sugar

Cook quinoa according to the package directions and place the cooked quinoa in a large bowl.
Add all the remaining ingredients and toss everything very well to combine. Taste and see if the salad needs more vinegar, salt, etc. and season or add accordingly.
Serve immediately!
