Caramel Apple Bread
Ingredients
- 4 eggs
- 1 1/2 C. oil
- 2 C. sugar
- 1 tsp. vanilla extract
- 3 C. peeled and diced apples
- 3 C. flour
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 tsp. baking soda
- 1 C. walnuts
- About 20 caramels, cut into quarters
Directions
Beat eggs; add oil, vanilla and sugar. Mix together. Add dry ingredients. Stir in apples and walnuts. Pour into 2 loaf pans. Place 1/2 the caramels on top of each loaf. Bake at 325 degrees for 1 hour or until toothpick placed in center comes out clean. Can be served warm with butter or even vanilla ice cream.
