Caramel apples are getting a new look and a lot softer this fall. These apple cider donuts with caramel icing will be the hit of Halloween parties especially with their funky green color scheme. Made with children or on your own they’re sure to be a messy but delicious treat.

  • Donuts
  • 2 ¾ C. all-purpose flour
  • ¼ C. cornstarch
  • 1 tsp. cinnamon
  • 1 tsp. baking powder
  • 1 tsp. baking soda
  • ½ tsp. salt
  • 1 ½ C. room temperature, unsalted butter
  • 1 ½ C. sugar
  • 3 eggs
  • 3 egg yolk
  • 1 cup apple cider
  • Icing
  • 3 C. powdered sugar
  • 2 tsp. corn syrup
  • Pinch of salt
  • 2-4 T. boiling water
  • 1 C. sugar
  • ½ C. water
  • ½ C. Heavy cream
  • 3 T. Caramel
  • Food coloring (optional)

Preheat oven to 350 degrees and coat donut pan with nonstick cooking spray. Combine flour, cornstarch, cinnamon, baking powder, baking soda, and kosher salt in a large bowl and whisk well. In another bowl mix together sugar and butter, then add eggs and egg yolks and blend together until smooth. Combine flour mixture into wet mixture slowly and thoroughly along with apple cider as well. Be careful not to over mix batter or donuts will be tough. Once batter is complete pipe batter into sprayed donut pan. Bake for 8-10 minutes and cool. While donuts bake, whisk powdered sugar, corn syrup, and salt and then whisk in boiling water, one tablespoon at a time, until icing starts to form. In a saucepan, stir together sugar and water and bring to a boil. Cook on high for 7-8 minutes then remove from heat and pour in heavy cream slowly whisky at a constant rate. Stir in caramel and 1-2 drops of food coloring if desired. When donuts are cool dip each top into icing and serve.
