  • 3 pounds apples
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 cups flour
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 3 teaspoons vanilla
  • 3 lightly beaten eggs
  • 2 ½ cups chopped toasted walnuts
  • 2 cans sweetened condensed milk
  • ½ cup brown sugar
  • ½ cup butter

Peel and core 4 apples. Cut the 4 apples into 24 rings next. Sauté the apple rings over medium heat for 2 minutes. You might have to cook the rings in batches. Remove the rings from the pan and place 1 apple ring in each muffin cup after greasing the tin. Peel and chop the rest of the apples. In a bowl, mix the sugar, oil, eggs, and 2 teaspoons vanilla together. In another bowl, stir the flour, baking soda, and cinnamon together. Then combine the two bowls and fold in the apples and 1 cup nuts. Spoon the batter into the muffin cups and bake for 25 minutes at 350 degrees.

Meanwhile, make caramel frosting. Place the last 3 ingredients and the remaining vanilla in a saucepan and bring the mixture to a boil over medium-low heat, stirring constantly. Cook and stir for 5 minutes and then remove from the heat. Remove the muffins from the oven when they are done and allow the muffins to cool. Gently create an indent into each of the muffins and spoon the caramel frosting over the muffins. Sprinkle with the rest of the walnuts.
