Caramel Oatmeal Peanut Butter Cookies

- 1 1/4 C. packed brown sugar
- 1 C. granulated sugar
- 1 1/3 C. creamy peanut butter
- 1/2 C. unsalted butter
- 3 eggs
- 2 Tsp. baking soda
- 1/2 Tsp. vanilla extract
- 1/2 Tsp. salt
- 4 1/2 C. quick-cooking oatmeal
- 1 1/2 C. chocolate chips
- 1/2 C. caramels

In your mixer, combine 1 1/4 cups packed brown sugar, 1 cup granulated sugar, 1 1/3 cups creamy peanut butter, and 1/2 cup (8 tablespoons) room-temperature unsalted butter on medium-high until fully blended. Then add three eggs, one at a time, scraping the sides of the bowl when necessary. Add 2 tsp. baking soda, 1/2 tsp. vanilla extract, and 1/2 tsp. salt and mix well.Put the mixer on low speed to mix in 4 1/2 cups quick-cooking oatmeal a little bit, then fold in 1 1/2 cups chocolate chips and 1/2 cup caramels, cut up. Now put your batter in the fridge for a half hour to an hour and preheat your oven to 350. Scoop the batter on to a baking sheet or pan in 1 1/2 inch balls and bake for eight minutes. Rotate in between baking for two to three minutes until light brown. Then let them cool, and enjoy!
