Caramel Sweet Potato Casserole

- 3 C. mashed sweet potatoes
- 2 lightly beaten eggs
- 1 C. brown sugar
- ¼ C. caramel sauce
- ½ C. milk
- ½ C. melted butter
- 1 tsp. vanilla extract
Preheat the oven to 350 degrees F.
Boil the peeled sweet potatoes until soft. Drain and mash in a bowl.
Add eggs, brown sugar, caramel, milk, butter, and vanilla.
Spread the potatoes in a baking dish.
Bake 30 minutes and cool 15 minutes before serving.
