These no bake cookies are rich and creamy, with a slight tartness from craisins. Not to mention peanut-caramel sauce adds a ton of flavor and sophistication

  • 1/2 cup peanut butter, creamy is better but crunchy works too!
  • 1/2 stick butter
  • 1/2 cup milk or half and half
  • 2 cups light brown sugar
  • 3 cups oats
  • 1 cup craisins

Over medium heat, stir together the peanut butter and butter over medium heat. As soon as they melt, pour in the milk and sugar. Bring the mixture to a boil and allow it to simmer for 1-2 minutes, continually stirring.

In a large bowl, toss the craisins and oats. Pour in the peanut butter caramel mixture and stir.

Line a baking sheet with parchment or wax paper and scoop the dough onto the wax paper. Refrigerate for 2-3 hours and then serve!
