  • 6 eggs
  • 1 C. milk
  • 1 tsp. vanilla extract
  • 1 tsp. cinnamon
  • 6 slices thick bread
  • 2 T. butter
  • 3-4 apples, peeled, cored, and sliced
  • 2 T. water
  • ½ C. maple syrup

Preheat oven to 375 degrees. In a bowl, whisk together eggs, milk, vanilla, and a pinch of cinnamon. Soak slices of bread on both sides and transfer to a greased baking dish. Bake for 10 minutes. Meanwhile, in a skillet, melt butter and cook apples over medium heat until they begin to caramelize. Add in water and cook for another 5 minutes until tender. Stir in syrup and cinnamon and simmer briefly. Top French toast with apples and return to the oven for an additional 5 minutes. Use the broiler for more of a golden crunch.
