As though caramelized bacon weren't enough, the addition of mushrooms to this recipe is something to die for. Serve this as an appetizer or light main course with a side salad.

1 flatbread


  • 1 pre-cooked pizza dough, rolled thin
  • 1 c. brown sugar
  • 1 lb. thin bacon
  • 1 sweet onion, sliced
  • 3 Tblsp. olive oil
  • 1 tsp. salt
  • 1 tsp. fresh rosemary
  • 1/2 lb. mushrooms
  • 3 Tblsp. butter
  • black olives, as desired
  • blue cheese, as desired

Preheat the oven to 350°. Cover a baking sheet with tinfoil and put a baking rack on top.

In a bowl, toss the bacon and sugar until the bacon is completely coated. Lay the bacon on the rack and bake for 15 minutes, turning halfway through.

Remove from oven and set aside. When cool, crumble the bacon into pieces.

Turn the oven up to 425°. Press the pizza dough into a 15x10 jelly roll pan or a large round pizza pan. Use a fork to prick the bread all over.

In a small frying pan, saute the onions in a little oil until soft. Scoop out and drain. Add the butter and cook the onions until soft. 

Drizzle the remaining oil over the dough. Add the mushrooms, onions and crumbled bacon, then season with salt, pepper and rosemary. Top with olives and blue cheese, if desired. Bake for 20 minutes. Serve hot or cold.
