  • 2 T. olive oil
  • 3 onions, sliced
  • 1 T. balsamic vinegar
  • 1 pt. sliced mushrooms
  • 3 cloves minced garlic
  • 1/3 C. cream
  • 1/4 C. milk
  • 1/2 C. Parmesan cheese
  • 1/4 tsp. salt

Heat 1 tablespoon of olive oil in a large skillet, then add the sliced onions and cook on high for 10 minutes, stirring constantly. Reduce the heat to medium and continue to stir and cook for 10 more minutes. Add a pinch of salt to the onions, then continue to cook on low heat for 10 more minutes, making sure they don't stick. Remove the onions from the heat and at the balsamic vinegar to deglaze, scrapping the bottom of the pan with a spatula. In a separate pan, begin to cook the mushrooms with 1 tablespoon of olive oil and the garlic. Keep the mushrooms on low and cover, cooking for 20 minutes and stirring occasionally. Add the cooked mushrooms to the onions, then add the cream, milk, cheese, and salt, stirring to coat the vegetables. Cook on low heat for 8 minutes.
