Give a subtly sweet twist to your baked treat with some caramelized pineapples in this upside-down cake. With 5 simple ingredients, you can wow your guests into thinking you spent way longer on this than you actually did.

  • 1 box yellow cake mix
  • 4 eggs
  • 1 can pineapple rings with thick syrup
  • 3 Tbs. vanilla
  • ½ C. butter
  • 1 ½ C. brown sugar

Preheat oven at 350 degrees F. Melt butter. In bowl, combine butter, syrup from pineapple can, vanilla, and eggs. Add in yellow cake mix and stir. In a greased baking pan, lay ¾ cups of the brown sugar. Layer the pineapple rings on top of the brown sugar but make sure not to overlap them. Spread rest of brown sugar on top of pineapples for caramelization, and pour cake batter on top. Bake according to yellow cake mix directions. After baking, let cake cool down for 10-15 minutes. Then flip cake over and serve.

Note: If you’re feeling fancy, place little cherries in the center of the pineapple rings before pouring the batter and baking!
