Ingredients

  • 20 pearl onions, peeled
  • 2 medium carrots, peeled and cut into 1-inch pieces
  • 1 medium parsnip, peeled and cut into 1-inch pieces
  • 1 small celery root, peeled and cut into 1-inch pieces
  • 1 medium rutabaga, peeled and cut into 1-inch pieces
  • 1 medium sweet potato, peeled and cut into 1-inch pieces
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons chopped fresh thyme leaves
  • Salt
  • black pepper
  • 1 tablespoon unsalted butter

Preheat the oven to 400F.
Toss the vegetables together with the olive oil and thyme in a large bowl. After, season with salt and pepper for taste.
Then, arrange the root vegetables in one layer on a baking sheet and dab with butter.
Place vegetables in the preheated oven and roast for an hour. During the first 30 minutes of cooking, stir continuously. Vegetables should be done when they are tender and golden.
Serve immediately.
