Caribbean Chicken Salad with Honey-Lime Dressing

Ingredients

  • 2 to 4 chicken breasts
  • Salt, pepper, garlic and onion powder to taste
  • Lime juice
  • 2 bags - Mixed greens
  • 1 (8 oz.) can Pineapple tidbits, well drained
  • 1 (11 oz.) can Mandarin oranges, well drained
  • 2 small tomatoes (tennis ball size), seeded and diced
  • 2 small avocados or 1 large, diced or sliced
  • 1 bag tortilla chips, crushed
  • Dressing:
  • 1/4 tsp. ground ginger
  • 1/4 C. Dijon mustard
  • 1/2 C. mayonnaise
  • 1/4 C. honey
  • 1/4 C. lime juice or 4 fresh limes squeezed
  • 2 Tbs. sesame oil

Directions

Season chicken breasts with salt, pepper, garlic powder, onion powder and a squeeze of lime juice. Grill outdoors or use grill pan. Cool and dice. Toss all salad ingredients together and sprinkle tortilla chips on top. For dressing: Stir ginger and mustard together and whisk in remaining ingredients. Pour over salad. Serve chilled.
