Caribbean Chicken Salad with Honey-Lime Dressing

Ingredients
- 2 to 4 chicken breasts
- Salt, pepper, garlic and onion powder to taste
- Lime juice
- 2 bags - Mixed greens
- 1 (8 oz.) can Pineapple tidbits, well drained
- 1 (11 oz.) can Mandarin oranges, well drained
- 2 small tomatoes (tennis ball size), seeded and diced
- 2 small avocados or 1 large, diced or sliced
- 1 bag tortilla chips, crushed
- Dressing:
- 1/4 tsp. ground ginger
- 1/4 C. Dijon mustard
- 1/2 C. mayonnaise
- 1/4 C. honey
- 1/4 C. lime juice or 4 fresh limes squeezed
- 2 Tbs. sesame oil

Directions
Season chicken breasts with salt, pepper, garlic powder, onion powder and a squeeze of lime juice. Grill outdoors or use grill pan. Cool and dice. Toss all salad ingredients together and sprinkle tortilla chips on top. For dressing: Stir ginger and mustard together and whisk in remaining ingredients. Pour over salad. Serve chilled.
