Caribbean Fudge Pie
Ingredients
- 1/4 C. butter or margarine, softened
- 3/4 C. firmly packed brown sugar
- 3 eggs
- 12-oz. pkg. (2 C.) semi-sweet chocolate pieces, melted
- 2 tsp. instant coffee powder
- 1 tsp rum extract*
- 1/4 C. all-purpose flour
- 1 C. chopped walnuts
- 1/2 C. halves or large pieces walnuts
- 1 (9-in.) unbaked pastry pie shell
Directions
Heat oven to 375F. In large bowl, combine butter and brown sugar; beat until light and fluffy. Add eggs, one at a time, beat well after each addition. Add chocolate, instant coffee and rum extract to butter mixture; mix well. Stir in flour and 1 C. chopped walnuts; pour into pie shell. Decorate top with 1/2 C. large walnut pieces. Bake in lower third of oven at 375F for 25 minutes. Cool on wire rack. Chill before serving. Serve topped with whipped cream or ice cream, if desired. Store in refrigerator. Makes 8 servings.
*1 Tbsp. dark rum can be substituted for the rum extract
