Caribbean Salsa
Ingredients
- 2 C. canned black beans, rinsed and drained
- 1 C. canned crispy corn kernels, drained
- 3 Tbs. olive oil
- 3 Tbs. lime juice
- 1 small bell pepper, cored, seeded and finely diced
- 1 small red pepper, cored, seeded and finely diced
- 1/2 C. finely diced red onion
- 2 Tbs. jalapeño peppers, seeded and finely chopped
- 1/2 tsp. ground cumin
- 1/2 tsp. salt
- 1/4 tsp. black pepper
- 1/2 C. finely chopped fresh cilantro
Directions
Combine all ingredients in a mixing bowl. Toss well. Adjust the seasonings to your taste by adding more jalapeño peppers, salt and lime juice. The salsa should be highly seasoned.
