  • 3 pounds pork shoulder
  • 4 minced garlic cloves
  • 1 chopped onion
  • 2 teaspoons crushed oregano
  • 1 ½ teaspoons salt
  • 24 warmed tortillas
  • 7 stripes orange zest
  • 1 ¼ teaspoons crushed red pepper flakes
  • 2 limes

Cut the pork into cubes after trimming any fat. Place the pork in a large pot and add water to cover the pork by 2 inches. Add the garlic, onion, red pepper flakes, orange zest, oregano, and salt. Boil the pot and then lower to a simmer. Simmer for 1.5 hours. Season with salt and simmer for 30 more minutes or until the water evaporates. Stir and cook for 10 minutes. Spoon the carnitas into the flour tortillas and drizzle with lime juice.
