- 8 C. coconut oil
- 1 1/2 C. skim milk
- 2 eggs
- 2 C. all-purpose flour
- 1 tsp. baking powder
- 1/2 tsp. ground cinnamon
- 1/2 tsp. Salt
- 1 C. strawberries
- 3/4 C. confectioners' sugar

Directions
In a skillet, heat oil to 375 degrees F. Meanwhile, combine the beat eggs with the skim milk in a large bowl. Then, combine the flour, baking powder, cinnamon,and salt. Stir into the egg mixture. Using your hand cover the funnel hole and pour a cup of the batter. Start from the center and in a swirling motion make 6 inch circles. Fry the swirled batter until it turns golden brown. Sprinkle with confectioners' sugar and toss some strawberries on top.
