Carribean Soybean and Rice Bake

Ingredients
- 1 1/2 C. uncooked instant brown rice
- 1 C. frozen shelled edamame (green) soybeans
- 1/2 med. green bell pepper, coarsely chopped
- 4 med. sliced green onions
- 1 Tbs. Caribbean jerk seasoning or Cajun seasoning
- 1 C. water
- 1 15-oz. can soybeans, drained, rinsed
- 1 14.5-oz. can stewed tomatoes with Italian herbs, undrained, cut up
- 1 C. shredded Cheddar cheese
Directions
Heat oven to 375 degrees. Spray 11 X 7-inch glass baking dish with cooking spray. In dish, mix all ingredients except cheese. Cover tightly with foil; bake 25 to 30 minutes or until liquid is absorbed and rice is tender. Uncover; stir in 1/2 cup cheese. Sprinkle remaining cheese over top. Bake uncovered 5 minutes longer or until cheese is melted.
