Ingredients
- 6 lg. carrots
- 1/2 C. golden raisins
- 3/4 C. orange juice
- 1 tsp. granulated sugar
- 1/8 tsp. salt
- 1/4 C. pistachio meats
Directions
Peel and grate carrots. Combine carrots, raisins, orange juice, sugar, and salt in a medium bowl. Cover and refrigerate for 3-4 hours before serving. Right before serving, mix in pistachio meats.
