This is a quick and easy to prepare salad that goes great with potato pancakes!

  • 1 Tbs. fresh lemon juice
  • 1 Tbs. extra virgin olive oil
  • 1/4 tsp. salt
  • 1 10-oz. pkg. shredded carrots
  • 1 C. packed fresh parsley leaves

In small bowl, with fork, stir lemon juice, oil and salt until blended. In salad bowl, combine carrots and parsley.  Pour dressing over salad and toss to coat evenly.
