  • 2 large carrots, shredded
  • 1 lettuce head, shredded
  • 1/4 C. chopped peanuts
  • 1/2 C. plain yogurt
  • 2 Tbs. peanut butter
  • 1/4 tsp. curry powder

In a small bowl, mix together the peanut butter, yogurt, and lemon juice until smooth and creamy. Add in the curry powder and salt. Combine remaining ingredients in a separate bowl and add dressing. Toss until coated well.
