Carrot Souffle

This recipe for carrots will surprise everyone. It is so sweet and looks wonderful.

Ingredients

  • 4 cans carrots, drained
  • 1 stick butter
  • 1/2 C. brown sugar
  • 1 Tbs. cinnamon
  • 2 Tbs. flour
  • 2 eggs

Heat carrots until hot, then drain and mash. Add butter, cinnamon, and brown sugar and mix well. Add flour and eggs. Mix all together with a mixer if possible. Taste test for sweetness; add more cinnamon if necessary. Grease pan and pour in mixture. Top with a little brown sugar if desired. Bake in a 350-degree oven for 30 minutes.
