Carrot Souffle
Ingredients
- 4 cans carrots, drained
- 1 stick butter
- 1/2 C. brown sugar
- 1 Tbs. cinnamon
- 2 Tbs. flour
- 2 eggs
Directions
Heat carrots until hot, then drain and mash. Add butter, cinnamon, and brown sugar and mix well. Add flour and eggs. Mix all together with a mixer if possible. Taste test for sweetness; add more cinnamon if necessary. Grease pan and pour in mixture. Top with a little brown sugar if desired. Bake in a 350-degree oven for 30 minutes.
