When I first tried this at my friend's house, I knew I had to get the recipe!

Ingredients

  • 3/4 C. sugar
  • 2 eggs
  • 1/2 C. vegetable oil
  • 1 tsp. vanilla
  • 1 1/2 C. flour
  • 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1/4 tsp. cinnamon
  • 1 1/2 C. carrots, grated
  • 1 C. walnuts

Directions

Combine sugar, eggs, oil, and vanilla in a mixing bowl and beat on medium speed until well blended.  Add flour, salt, soda, and cinnamon, and mix for 1 minute more.  Add carrots and walnuts and stir until thoroughly combined.  Grease an 8"x4" loaf pan and pour batter inside.  Bake at 350 degrees for 60-65 minutes.
