  • 1 C. wheat flour
  • 2 C. all purpose white flour
  • 3 C. grated carrots
  • 1 C. dark brown sugar
  • 2 C. panko bread crumbs
  • 1 & 1/2 sticks of butter
  • 2 tsp. cinnamon
  • 2 tsp. baking soda
  • 2 tsp. vanilla extract
  • 1 tsp. nutmeg
  • 2 eggs
  • 2 C. crushed walnuts
  • 1 C. panko bread crumbs
  • 1 tsp. dark brown sugar
  • 1 C. confectioners sugar
  • 3 tsp. milk
  • Sprinkles for decoration
  • 1 pinch of salt

Preheat oven to 350 degrees.
In a large bowl, mix butter, 1 cup of dark brown sugar, cinnamon, nutmeg, vanilla, and eggs with hand mixer until smooth.
Shift wheat flour, white flour, baking soda, and pinch of salt into the large bowl.  Add 2 cups of panko bread crumbs, carrots, and walnuts.  Mix with spoon until well-blended. 
Mix 1 cup of panko bread crumbs and the tablespoon of dark brown sugar and set aside.  This will be the coating for the "mookies". For a more festive look, color panko bread crumbs.
With your hands, form dough into cookie-shaped "mookies" each about 2 inches in diameter and 1/2 inch in thickness.  Cover "mookie" with panko, dark brown sugar mix.  Place "mookies" in cookie sheet.
Bake for about 20 minutes or until outside panko is nice and crisp.
Mix confectioners sugar with milk to form an icing.  Once "mookies" are cool, drizzle icing on top.  Dress it up with sprinkles.
