Cars Land Inspired Strawberry Rhubarb Pie

Ingredients
- Streusel Topping
- 1/2 C sugar
- 1/2 C brown sugar
- 5 Tbs. flour
- 1/4 tsp. salt
- 1 tsp. ground cinnamon
- 5 Tbs. unsalted butter, softened
- 1 tsp. vanilla extract
- Strawberry-Rhubarb Filling
- 1 1/2 C rhubarb, trimmed, cut into ½ inch sections crosswise
- 1 pre-made pie crust
- 1 egg
- 1 Tbs. water
- 2 C sliced strawberries
- 1/2 C brown sugar
- Lemon zest
- 2 Tbs. lemon juice
- 2 Tbs.flour
- 1 Tbs. ground cinnamon

Directions
Add all ingredients for the streusel topping in a medium sized bowl. Mash the butter and combine well. Set aside.
Preheat oven to 425 degrees.
Combine rhubarb, strawberries, brown sugar, lemon zest and lemon juice. Add flour and cinnamon to mix. Add into pre-made pie crust.
Bake for 10 minutes, then reduce heat to 375 degrees and bake an additional 25 to 30 minutes.
Let pie cool and then serve.
