  • 1/4 cup soy sauce
  • 2 Tbs. honey
  • 1 Tbs. cornstarch
  • 5 garlic cloves, minced
  • 3/4 cup cashews, raw
  • 2 Tbs.sesame oil
  • 2 lbs. beef sirloin, cut into cubes
  • 1 cup cherry tomatoes, halved
  • 1 onion, chopped

In a bowl, whisk soy sauce, honey, cornstarch, and garlic. Set aside. On low heat, toast the cashew in pan, stirring to keep them from burning. Remove from the pan and set aside. In the pan, heat the oil and add the beef. Cook for about 5 minutes. Add in the vegetables and cook for an additional 5 minutes or until veggies are tender and beef is cooked to desired doneness. Add the sauce and cashews. Cook for another two minutes. Serve alone or with brown rice.
