  • 2 red bell peppers, cut into strips
  • ½ C. cashews, chopped
  • 2 cloves garlic, minced
  • ¼ C. soy sauce
  • 1 tsp. rice wine vinegar
  • 1 tsp. hot sauce
  • ½ tsp. sugar
  • 1 tsp. ground ginger
  • 2 cans chicken broth
  • 1 C. fresh baby spinach
  • Pita pockets or flour tortillas
