  • 1/3 C. olive oil
  • 1 tsp. lime zest, minced
  • 1/4 C. fresh lime juice
  • 1 tsp. fresh cayenne
  • Salt and pepper to taste
  • 1 lb. fresh sea scallops

Add olive oil in a skillet over high heat. Rub scallops with remaining ingredients. Place each scallop on skillet. Sear each side for 1 1/2 minutes or until they have a golden crust. Feel free to serve over greens.
