  • 2 1/2 C. cooked chicken, shredded
  • 2 C. shredded Monterey Jack cheese
  • 2 C. shredded sharp cheddar cheese
  • 4 flour tortillas
  • 1 C. chunky salsa
  • 1/2 C. canned corn, drained

Heat a large skillet on medium heat for three minutes. Place a tortilla in your skillet and sprinkle 1/4 of all ingredients on half of the tortilla. When cheese begins to melt, carefully fold tortilla in half. Flip and continue cooking until golden brown. Repeat with remaining tortillas and serve immediately.
