Champs with Onions and Peas
Ingredients
- 2 lb. potatoes, peeled and cubed
- 1 stick butter or margarine
- 4 stalks scallions
- 1 clove garlic
- 1 C. milk
- 1/4 C. chopped parsley
- 1/2 C. frozen peas
- salt and pepper
Directions
Cook and drain potatoes. Meanwhile, in small sauce pan, melt butter or margarine, chopped scallions and garlic. Simmer until it becomes slightly soft and fragrant. Add to potatoes and mash, keeping pot on very low heat. Add milk and beat with electric mixer until creamy. Add the peas and mix in. Place a lid on the pot, remove from heat and let stand about 10 minutes for peas to heat. Transfer to a serving dish and drizzle more butter. Serve hot.
