Kids will love this casserole considering it contains Doritos, cheese, beans, enchilada sauce and sour cream.

Ingredients

  • 1 can chili with beans
  • 2 C. sharp cheddar cheese, grated
  • 1 large 12-oz. pkg. Doritos (save 2 Cups for casserole topping)
  • 10 to 15 oz. enchilada sauce
  • 8 oz. can tomato sauce
  • 2 Tbs. onion – grated
  • 1 1/4 C. sour cream

Directions

For the topping, set aside sour cream, 1/2 C. of the grated cheese, and 1/3 of the Doritos bag. Grate a small onion and measure 2 Tbs. and set aside. Take remaining 6-C. Doritos and crumble with your hands into mixing bowl. Mix the onion, and all the other ingredients — except those for the topping — and place into an 8 1/2 x 11-inch casserole dish. Bake for 20 minutes at 375F Remove casserole from oven. Spread on sour cream, cover with Doritos, and sprinkle 1/2 C. cheese. Bake for an additional 5 minutes and serve.

  • I made this recipe last night but I added 1lb. ground chuck which I browned and added a package of taco seasoning to the browned ground chuck. I didn't have the enchilada sause. I added that to all the other ingredients and then I layered the meat ingredients then a layer of crushed Doritos and a layer of cheese. I was able to make two layers with crushed Doritos and cheese on top. My son and sister absolutely loved it. I want to try it with the enchilada sauce, hope they love that as well! Easy, and delicious!

  • I made this tonight, it was great, I added 1 lb. of ground turkey. It helped to calm the enchilada sauce down, I have an ulcer.

  • I just made this and it was great. My boys loved it. I also put rice in it..gave it a nice touch. I left out the sour cream though. Good quick recipe.
