Charred peppers fresh off the grill are one of our summer favorites. They’re just so simple, yet delicious. We decided to amp it up by creating a salad of charred peppers. You don’t even need to heat up the grill for this one!

  • 2 yellow bell peppers, seeded and chopped or sliced
  • 2 red bell peppers, seeded and chopped or sliced
  • 1/4 cup olive oil
  • 1 tablespoon pepper
  • 1 tsp salt
  • 1/2 cup crumbled feta cheese (fresh mozzarella works wonderfully too)
  • Optional: fresh basil for garnish

Preheat the oven to 400
Toss the chopped or sliced bell peppers with the olive oil and spices in a bowl.
Place on a foil lined baking sheet.
Cook for about 30-45 minutes, or until the peppers begin to blacken and char.
Remove from oven and let cool.
Toss with cheese and top with basil if desired.
