Charred Bell Pepper Salad
Serving Size / Yield
- 2 yellow bell peppers, seeded and chopped or sliced
- 2 red bell peppers, seeded and chopped or sliced
- 1/4 cup olive oil
- 1 tablespoon pepper
- 1 tsp salt
- 1/2 cup crumbled feta cheese (fresh mozzarella works wonderfully too)
- Optional: fresh basil for garnish
Preheat the oven to 400
Toss the chopped or sliced bell peppers with the olive oil and spices in a bowl.
Place on a foil lined baking sheet.
Cook for about 30-45 minutes, or until the peppers begin to blacken and char.
Remove from oven and let cool.
Toss with cheese and top with basil if desired.
