  • 1 tablespoon vegetable oil
  • 8 ounce cooked Irish bacon, cooked and chopped
  • 4 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 teaspoon sugar
  • 1 cup grated Irish cheddar
  • 4 chopped green onion
  • 1 1/2 cup buttermilk

Preheat oven to 400 degrees.

Stir together everything except the buttermilk. Once combined add buttermilk and mix until dough comes together.

Form the dough into a round loaf and place on a baking sheet lined with parchment paper. Cut a cross onto top of dough with a knife. Bake for 40-45 minutes, until golden brown.
