Cheddar Cheese Potato Soup

This tasty soup is for the cheese-lovers out there.

  • 1/3 C. onion
  • 1/3 C. celery soup
  • 2 Tbs. butter/margarine
  • 4 C. peeled and diced potatoes
  • 3 C. chicken broth
  • 2 C. shredded cheddar cheese (8 oz.)
  • 2 C. can evaporated milk
  • 1/4 tsp. pepper
  • dash paprika
  • Season croutons and fresh parsley

In a large sauce pan, sauté onion and celery in butter/margarine until tender. Add potatoes and broth and bring to a boil. Reduce heat, cover, and simmer for 10 to 15 minutes or until potatoes are tender. Puree in small batches in a blender until smooth; return to pan. Stir in cheese, evaporated milk, pepper and paprika. Cook and stir until cheese has melted. Garnish with croutons and parsley.
