Cheddar Crisps

A friend gave this recipe to me. These are a wonderful snack for those late night munchies or after school snack. Try a batch tonight.

  • 1 3/4 C. all-purpose flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 6 oz. cheddar cheese, shredded
  • Coarsely ground black pepper
  • 1/2 C. yellow corn meal
  • 1/2 tsp. sugar
  • 1/2 C. margarine (1 stick)
  • 2 Tbs. white vinegar
  • 1/2 C. cold water

In large bowl, mix flour, corn meal, baking soda, sugar, and salt. With pastry blender, cut in margarine until mixture resembles coarse crumbs. With fork, stir in shredded cheese, vinegar, and 1/2 cup cold water just until mixture forms a soft dough. Shape dough into a ball; wrap with plastic wrap and refrigerate 1 hour, or until dough is firm enough to handle.

Preheat oven to 375 degrees. Grease large cookie sheet. On lightly floured surface, roll 1/4 of dough into paper-thin round, keeping remaining dough refrigerated. Cut round into 8 wedges. Place on cookie sheet. Sprinkle with coarsely ground black pepper, firmly pressing into dough. Bake about 10 minutes, or until browned and crisp. Remove to wire racks to cool. Repeat with remaining dough.
