  • 1 cup shredded zucchini

Spray a muffin tin with cooking spray and preheat the oven to 350 degrees F. Combine the flour, baking soda, baking powder, and salt in a bowl and mix the ingredients together. In a separate bowl, mix together the butter, egg, zucchini, garlic, and milk. Gradually mix the flour mixture into the milk mixture and stir until everything is incorporated. Fold in the cheese.
